Preheat your oven to 350°F (175°C).

Prepare Sweet Potatoes:

Boil the sweet potatoes whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potatoes, and remove the skin.

Break apart sweet potatoes in a bowl and mash until smooth.

Mix the Filling:

In a mixing bowl, add mashed sweet potatoes, sugar, butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well.

Gradually add evaporated milk, stirring to combine.

Prepare Pie Crust:

Place the pie crust in a 9-inch pie pan. Trim and shape the edges.

Assemble the Pie:

Pour the sweet potato filling into the pie crust.

Bake the Pie:

Bake for 55 to 60 minutes, or until a knife inserted in the center comes out clean.

Pie will puff up like a soufflé, and then will sink down as it cools.

Cool and Serve:

Allow the pie to cool on a wire rack.

Serve warm or at room temperature, optionally with a dollop of whipped cream.

Sweet Potato Pie is a comforting, warmly spiced dessert that’s perfect for family gatherings or as a treat to enjoy any time. Its creamy texture and rich flavor make it a beloved choice for many pie lovers. Enjoy your baking!
