A colorful and delicious Fruit Pizza made with a soft sugar cookie crust, creamy frosting, and topped with fresh fruits. Perfect for parties and summer desserts.

- 1 package (16.5 oz) refrigerated sugar cookie dough
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- Assorted fresh fruits (strawberries, blueberries, kiwi, grapes, mandarin oranges, etc.)
- 1/4 cup apricot preserves (optional, for glaze)
- 1 tbsp water (if using glaze)
Instructions
- Preheat oven to 350°F (175°C).
- Press sugar cookie dough evenly onto a pizza pan or baking sheet to form a crust.
- Bake for 12–15 minutes or until lightly golden. Cool completely.
- In a bowl, beat softened cream cheese with sugar and vanilla extract until smooth.
- Spread the cream cheese mixture over the cooled cookie crust.
- Arrange assorted fresh fruits on top in a decorative pattern.
- Optional: Heat apricot preserves with water in a small saucepan and brush over the fruit for a shiny glaze.
- Refrigerate for at least 1 hour before serving.
Notes
- Use any combination of seasonal fruits you like.
- Make sure the cookie crust is completely cool before adding the topping.
- Best enjoyed within 1–2 days of assembly.
