Banana Pudding Recipe

Ingredients:
3/4 cup granulated sugar, divided
1/3 cup all-purpose flour
Dash of salt
3 cups milk
3 large eggs, separated
2 teaspoons vanilla extract
1 package (11 oz) vanilla wafers
4-5 ripe bananas, sliced

Prepare Pudding Mixture: In a saucepan, combine 1/2 cup sugar, flour, and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.

Temper Egg Yolks: Beat egg yolks slightly. Gradually stir a small amount of the hot mixture into the yolks. Then, add the yolk mixture back into the saucepan. Cook for 2 more minutes, stirring constantly.

Add Vanilla: Remove from heat and stir in vanilla extract.

Layer Wafers and Bananas: In a serving dish, layer vanilla wafers, followed by slices of banana, and then the pudding. Repeat the layers until all ingredients are used.

Beat Egg Whites: In a clean bowl, beat egg whites until soft peaks form. Gradually add the remaining 1/4 cup sugar, beating until stiff peaks form.

Top Pudding: Spread the meringue over the pudding, sealing the edges.

Bake: Bake in a preheated oven at 350°F (175°C) for 10-15 minutes, or until the meringue is lightly browned.

Cool and Serve: Let the pudding cool for a bit before serving. It can be served warm or chilled, with optional whipped cream on top.
