- 1 large head romaine lettuce, chopped
- 1 (15 oz) can chickpeas, drained, rinsed, and patted dry
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup vegan Caesar dressing (store-bought or homemade)
- 1/4 cup vegan Parmesan cheese (optional)
- Juice of 1/2 lemon (optional, for extra brightness)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Spread chickpeas on the baking sheet and roast for 25-30 minutes, shaking halfway through, until crispy.
- In a large bowl, combine chopped romaine lettuce and vegan Caesar dressing. Toss to coat.
- Top salad with roasted chickpeas and sprinkle with vegan Parmesan if using.
- Drizzle with lemon juice before serving, if desired.
Notes
- For added crunch, use homemade croutons made with toasted sourdough bread.
- Chickpeas can be roasted ahead of time and stored in an airtight container.
