Description

A creamy and smooth homemade vanilla pudding made from scratch with simple ingredients—perfect as a classic dessert or filling for pies and pastries.


Ingredients

  • 2 1/2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

Instructions

  1. In a medium saucepan, whisk together sugar, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and starts to bubble, about 5-7 minutes.
  4. In a small bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot milk mixture into the yolks while whisking constantly to temper them.
  5. Pour the tempered yolks back into the saucepan, whisking constantly. Cook for another 2 minutes, until thickened.
  6. Remove from heat and stir in butter and vanilla extract.
  7. Pour the pudding into individual serving dishes and press plastic wrap directly onto the surface to prevent a skin from forming.
  8. Chill for at least 2 hours before serving.

Notes

  • For a richer flavor, substitute some of the milk with half-and-half or cream.
  • Top with whipped cream, fresh fruit, or cookie crumbles for extra flair.
  • Can be used as a filling for cream puffs, trifles, or pies.
