- 1 packet taco seasoning mix
- 2/3 cup water
- 2 cups cooked white or brown rice
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 avocado, diced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, add olive oil and cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the skillet. Simmer for 5 minutes until sauce thickens.
- Warm the cooked rice if necessary and divide evenly into serving bowls.
- Top each bowl with taco-seasoned beef.
- Add shredded lettuce, cherry tomatoes, cheddar cheese, avocado, sour cream, and salsa over the beef.
- Season with salt and pepper to taste and serve immediately.
