The Sparkling Rhubarb Margarita is a refreshing twist on a classic cocktail, combining the tartness of rhubarb with tequila, lime, and a bubbly finish. Perfect for spring and summer sipping.

- 1/2 cup chopped rhubarb
- 1/4 cup granulated sugar
- 1/4 cup water
- 2 oz tequila
- 1 oz orange liqueur (such as Cointreau or Triple Sec)
- 1 oz fresh lime juice
- 1 oz rhubarb syrup (from above)
- 2 oz sparkling water or club soda
- Ice
- Lime wedge and coarse salt or sugar, for rimming glass (optional)
Instructions
- Make the rhubarb syrup: In a small saucepan, combine chopped rhubarb, sugar, and water. Bring to a simmer over medium heat and cook until rhubarb is soft, about 10 minutes. Strain and let the syrup cool.
- Optional: Rim a glass with lime juice and dip in coarse salt or sugar.
- In a shaker filled with ice, combine tequila, orange liqueur, lime juice, and rhubarb syrup. Shake well.
- Strain into a glass filled with fresh ice.
- Top with sparkling water or club soda and stir gently.
- Garnish with a lime wedge or rhubarb ribbon if desired. Serve immediately.
Notes
- The rhubarb syrup can be made ahead and stored in the fridge for up to 1 week.
- Adjust sweetness to taste by adding more or less syrup.
- For a mocktail version, omit the alcohol and use more sparkling water and a splash of orange juice.
