Description

The Sparkling Rhubarb Margarita is a refreshing twist on a classic cocktail, combining the tartness of rhubarb with tequila, lime, and a bubbly finish. Perfect for spring and summer sipping.


Ingredients

  • 1/2 cup chopped rhubarb
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 2 oz tequila
  • 1 oz orange liqueur (such as Cointreau or Triple Sec)
  • 1 oz fresh lime juice
  • 1 oz rhubarb syrup (from above)
  • 2 oz sparkling water or club soda
  • Ice
  • Lime wedge and coarse salt or sugar, for rimming glass (optional)

Instructions

  1. Make the rhubarb syrup: In a small saucepan, combine chopped rhubarb, sugar, and water. Bring to a simmer over medium heat and cook until rhubarb is soft, about 10 minutes. Strain and let the syrup cool.
  2. Optional: Rim a glass with lime juice and dip in coarse salt or sugar.
  3. In a shaker filled with ice, combine tequila, orange liqueur, lime juice, and rhubarb syrup. Shake well.
  4. Strain into a glass filled with fresh ice.
  5. Top with sparkling water or club soda and stir gently.
  6. Garnish with a lime wedge or rhubarb ribbon if desired. Serve immediately.

Notes

  • The rhubarb syrup can be made ahead and stored in the fridge for up to 1 week.
  • Adjust sweetness to taste by adding more or less syrup.
  • For a mocktail version, omit the alcohol and use more sparkling water and a splash of orange juice.
