Ingredients

Units Scale

For the Fritters

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup whole milk (or buttermilk)
  • 2 teaspoons vanilla extract
  • 2 medium apples, peeled, cored, and diced (about 1 1/2 cups)
  • Vegetable oil, for frying

For the Vanilla Glaze

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

To Make the Fritters

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate bowl, beat the eggs, milk, and vanilla extract until combined. Gradually stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
  3. Fold in the diced apples gently.
  4. Heat about 2 inches of vegetable oil in a large pot or deep skillet to 375°F (190°C).
  5. Using a large spoon or ice cream scoop, drop the batter into the hot oil in small mounds. Fry 3–4 fritters at a time, being careful not to overcrowd the pan.
  6. Cook for 2–3 minutes per side or until golden brown. Use a slotted spoon to transfer fritters to a paper towel-lined plate.

To Make the Vanilla Glaze

  1. In a medium bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or powdered sugar if needed.
  2. Drizzle the glaze over warm fritters or dip the tops of the fritters into the glaze. Allow to set for a few minutes before serving.

Notes

  • For extra flavor, try adding a pinch of ground cloves or allspice to the batter.
  • Use a candy thermometer to ensure your oil stays at the proper temperature.
  • Best enjoyed fresh, but you can reheat fritters in the oven at 350°F (175°C) for 5–7 minutes.
