This hearty and flavorful soup is packed with smoky sausage, tender sweet potatoes, and nutrient-rich kale. It’s the perfect cozy meal for chilly nights and comes together easily in one pot. A delicious balance of savory, sweet, and just a touch of spice.
Ingredients

1 tablespoon olive oil

12 oz smoked sausage (such as andouille or kielbasa), sliced

1 medium yellow onion, diced

3 garlic cloves, minced

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/4 teaspoon red pepper flakes (optional)

2 medium sweet potatoes, peeled and cubed

6 cups chicken broth

1 bunch kale, stems removed and leaves chopped

Salt and pepper, to taste
Instructions

Heat olive oil in a large pot over medium heat.

Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.

In the same pot, add onion and cook until soft, about 3–4 minutes.

Stir in garlic, smoked paprika, thyme, and red pepper flakes. Cook for 1 minute.

Add sweet potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until the potatoes are tender.

Return the sausage to the pot and stir in the chopped kale. Simmer for another 5 minutes, until the kale is wilted.

Season with salt and pepper to taste. Serve hot.
