Description

This hearty and flavorful soup is packed with smoky sausage, tender sweet potatoes, and nutrient-rich kale. It’s the perfect cozy meal for chilly nights and comes together easily in one pot. A delicious balance of savory, sweet, and just a touch of spice.


Ingredients

  • 1 tablespoon olive oil

  • 12 oz smoked sausage (such as andouille or kielbasa), sliced

  • 1 medium yellow onion, diced

  • 3 garlic cloves, minced

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon dried thyme

  • 1/4 teaspoon red pepper flakes (optional)

  • 2 medium sweet potatoes, peeled and cubed

  • 6 cups chicken broth

  • 1 bunch kale, stems removed and leaves chopped

  • Salt and pepper, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.

  3. In the same pot, add onion and cook until soft, about 3–4 minutes.

  4. Stir in garlic, smoked paprika, thyme, and red pepper flakes. Cook for 1 minute.

  5. Add sweet potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until the potatoes are tender.

  6. Return the sausage to the pot and stir in the chopped kale. Simmer for another 5 minutes, until the kale is wilted.

  7. Season with salt and pepper to taste. Serve hot.


Notes

  • You can use turkey sausage or vegetarian sausage for a lighter option.

  • Leftovers keep well in the fridge for up to 4 days.

  • Add a squeeze of lemon juice at the end for brightness.
