- 14 oz smoked sausage, sliced
- 1.5 lbs baby potatoes, halved
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add potatoes and cook for 10-12 minutes, stirring occasionally, until golden and nearly tender. Remove and set aside.
- Add remaining olive oil to the skillet. Add sausage slices and cook until browned, about 4-5 minutes. Remove and set aside.
- Add onion and bell peppers to the skillet. Sauté for 4-5 minutes until softened.
- Return potatoes and sausage to the skillet. Add garlic powder, paprika, salt, and pepper. Stir everything together and cook for another 5 minutes until heated through and flavors meld.
- Garnish with fresh parsley and serve hot.
Notes
- Use any type of smoked sausage like kielbasa or andouille.
- For crispier potatoes, finish under the broiler for 2-3 minutes.
- This dish reheats well and is great for meal prep.
