Description

A hearty and flavorful one-pan meal made with smoky sausage, tender potatoes, and colorful bell peppers. It’s a simple, satisfying dish perfect for busy weeknights.


Ingredients

  • 14 oz smoked sausage, sliced
  • 1.5 lbs baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add potatoes and cook for 10-12 minutes, stirring occasionally, until golden and nearly tender. Remove and set aside.
  2. Add remaining olive oil to the skillet. Add sausage slices and cook until browned, about 4-5 minutes. Remove and set aside.
  3. Add onion and bell peppers to the skillet. Sauté for 4-5 minutes until softened.
  4. Return potatoes and sausage to the skillet. Add garlic powder, paprika, salt, and pepper. Stir everything together and cook for another 5 minutes until heated through and flavors meld.
  5. Garnish with fresh parsley and serve hot.

Notes

  • Use any type of smoked sausage like kielbasa or andouille.
  • For crispier potatoes, finish under the broiler for 2-3 minutes.
  • This dish reheats well and is great for meal prep.
