- 1 lb shrimp, peeled and deveined
- 2 cups cooked white or brown rice
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp garlic powder
- 1/2 tsp chili flakes (optional)
- 1/2 cup mayonnaise
- 2 tbsp sriracha
- 1 tsp lime juice
- Sesame seeds for garnish
Instructions
- In a bowl, marinate shrimp with soy sauce, sesame oil, garlic powder, and chili flakes for 10–15 minutes.
- Heat a skillet over medium heat and cook the shrimp for 2–3 minutes on each side until pink and cooked through.
- In a small bowl, mix mayonnaise, sriracha, and lime juice to make the spicy mayo.
- Divide cooked rice into bowls. Top with shrimp, avocado, cucumber, carrot, and green onions.
- Drizzle spicy mayo over the top and garnish with sesame seeds.
- Serve immediately and enjoy!
Notes
- You can use pre-cooked shrimp to save time; just warm them up before serving.
- Adjust sriracha in the mayo to your heat preference.
- Add pickled ginger or edamame for extra variety.
