Description

Shrimp rice bowls with spicy mayo are a flavorful, satisfying dish combining tender shrimp, fluffy rice, fresh veggies, and a creamy, spicy sauce for a perfect weeknight meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked white or brown rice
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • 1/2 tsp chili flakes (optional)
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tsp lime juice
  • Sesame seeds for garnish

Instructions

  1. In a bowl, marinate shrimp with soy sauce, sesame oil, garlic powder, and chili flakes for 10–15 minutes.
  2. Heat a skillet over medium heat and cook the shrimp for 2–3 minutes on each side until pink and cooked through.
  3. In a small bowl, mix mayonnaise, sriracha, and lime juice to make the spicy mayo.
  4. Divide cooked rice into bowls. Top with shrimp, avocado, cucumber, carrot, and green onions.
  5. Drizzle spicy mayo over the top and garnish with sesame seeds.
  6. Serve immediately and enjoy!

  • You can use pre-cooked shrimp to save time; just warm them up before serving.
