Description

Pepper Steak Stir Fry is a savory and colorful dish made with tender slices of beef, crisp bell peppers, and onions in a rich garlic-soy sauce. Quick, easy, and perfect over rice or noodles.


Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce (for sauce)
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1/4 cup beef broth or water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
  • Salt and black pepper to taste

Instructions

  1. In a bowl, toss sliced beef with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Let marinate for 10-15 minutes.
  2. Heat 1 tablespoon oil in a large skillet or wok over high heat. Add beef and stir-fry for 2-3 minutes until browned. Remove and set aside.
  3. Add remaining oil to the pan. Stir-fry bell peppers and onion for 3-4 minutes until crisp-tender. Add garlic and ginger, stir-fry for 30 seconds.
  4. Return beef to the pan. Stir in soy sauce, oyster sauce, hoisin sauce, and beef broth. Simmer for 2 minutes.
  5. Add cornstarch slurry and stir until sauce thickens. Season with salt and pepper to taste.
  6. Serve hot over rice or noodles.

Notes

  • Slice beef thinly and evenly for quick cooking.
  • Add chili flakes or sriracha for heat.
  • Leftovers keep well and can be reheated for quick meals.
