- 3 cups old-fashioned rolled oats
- 1/2 cup natural peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil (melted)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped peanuts (optional)
Instructions
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- In a large bowl, combine oats and chopped peanuts (if using).
- In a small saucepan over low heat, melt peanut butter, honey (or maple syrup), and coconut oil until smooth. Stir in vanilla, cinnamon, and salt.
- Pour the wet mixture over the oats and stir until evenly coated.
- Spread the granola in an even layer on the prepared baking sheet.
- Bake for 20–25 minutes, stirring halfway through, until golden and crisp.
- Let cool completely on the pan (it will continue to crisp as it cools).
- Store in an airtight container at room temperature for up to 2 weeks.
Notes
- For clumpier granola, press mixture down lightly before baking and avoid stirring.
- Add chocolate chips or dried fruit after cooling for extra flavor.
- Use crunchy or smooth peanut butter depending on texture preference.
