Description

Party Potatoes, also known as funeral potatoes, are a creamy, cheesy hash brown casserole topped with a buttery, crunchy topping — the ultimate crowd-pleasing comfort food side dish.


Ingredients

  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup unsalted butter, melted (divided)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups cornflakes, crushed

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix together hash browns, cream of chicken soup, sour cream, cheddar cheese, chopped onion, 1/4 cup melted butter, garlic powder, salt, and pepper.
  3. Spread the mixture evenly in the prepared baking dish.
  4. In a separate bowl, combine crushed cornflakes with the remaining 1/4 cup melted butter. Sprinkle evenly over the casserole.
  5. Bake for 45–50 minutes, or until hot and bubbly with a golden topping.
  6. Let cool slightly before serving.
