These Orange Creamsicle Cheesecake Bars are a refreshing and creamy dessert that combines the tangy flavor of orange with the smoothness of cheesecake. With a buttery graham cracker crust and a vibrant orange swirl, they’re a perfect treat for citrus lovers!

For the Crust:

  • 2 cups (200g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz (450g) cream cheese, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1/4 cup (60ml) sour cream
  • 1/2 tsp vanilla extract
  • 1/4 cup (60ml) freshly squeezed orange juice
  • 1 tsp orange zest
  • Orange food coloring (optional, for a creamsicle look)

For the Orange Swirl:

  • 1/4 cup (60ml) orange marmalade
  • 1 tbsp water

Instructions

 

  1. Preheat the Oven:
    • Preheat your oven to 325°F (165°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
  2. Make the Crust:
    • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
    • Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes, then let cool while preparing the filling.
  3. Prepare the Cheesecake Filling:
    • In a large bowl, beat the cream cheese and sugar together with an electric mixer until smooth and creamy.
    • Add the eggs, one at a time, mixing after each addition.
    • Mix in the sour cream, vanilla extract, orange juice, and orange zest. If desired, add a few drops of orange food coloring for a vibrant color.
  4. Make the Orange Swirl:
    • In a small bowl, whisk together the orange marmalade and water until smooth.
  5. Assemble the Bars:
    • Pour the cheesecake filling over the cooled crust and spread evenly.
    • Drizzle the orange marmalade mixture over the top and use a toothpick or skewer to create swirls.
  6. Bake:
    • Bake in the preheated oven for 35-40 minutes, or until the center is set but slightly jiggly.
  7. Cool and Chill:
    • Allow the bars to cool to room temperature, then refrigerate for at least 4 hours or overnight to fully set.
  8. Serve:
    • Use the parchment paper to lift the bars from the pan. Slice into squares and serve chilled.
