For the Crust:
- 2 cups (200g) graham cracker crumbs
- 1/4 cup (50g) granulated sugar
- 1/2 cup (115g) unsalted butter, melted
For the Cheesecake Filling:
- 16 oz (450g) cream cheese, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1/4 cup (60ml) sour cream
- 1/2 tsp vanilla extract
- 1/4 cup (60ml) freshly squeezed orange juice
- 1 tsp orange zest
- Orange food coloring (optional, for a creamsicle look)
For the Orange Swirl:
- 1/4 cup (60ml) orange marmalade
- 1 tbsp water
Instructions
- Preheat the Oven:
- Preheat your oven to 325°F (165°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
- Make the Crust:
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
- Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes, then let cool while preparing the filling.
- Prepare the Cheesecake Filling:
- In a large bowl, beat the cream cheese and sugar together with an electric mixer until smooth and creamy.
- Add the eggs, one at a time, mixing after each addition.
- Mix in the sour cream, vanilla extract, orange juice, and orange zest. If desired, add a few drops of orange food coloring for a vibrant color.
- Make the Orange Swirl:
- In a small bowl, whisk together the orange marmalade and water until smooth.
- Assemble the Bars:
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Drizzle the orange marmalade mixture over the top and use a toothpick or skewer to create swirls.
- Bake:
- Bake in the preheated oven for 35-40 minutes, or until the center is set but slightly jiggly.
- Cool and Chill:
- Allow the bars to cool to room temperature, then refrigerate for at least 4 hours or overnight to fully set.
- Serve:
- Use the parchment paper to lift the bars from the pan. Slice into squares and serve chilled.
