- 14 oz kielbasa sausage, sliced into rounds
- 1.5 lbs baby potatoes, halved or quartered
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss the potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread the potatoes on the baking sheet in a single layer and roast for 20 minutes.
- After 20 minutes, add the sliced kielbasa to the baking sheet and toss with the potatoes.
- Return to the oven and bake for an additional 20-25 minutes, or until potatoes are golden and fork-tender, and kielbasa is browned.
- Remove from the oven, garnish with chopped parsley if desired, and serve warm.
Notes
- You can add sliced onions or bell peppers for extra flavor and color.
- For crispier potatoes, broil for the last 2-3 minutes.
