Description

Olive Ricotta Dip is a creamy, tangy appetizer made with smooth ricotta cheese and briny olives, perfect for spreading on crackers or dipping with fresh veggies. It’s quick, flavorful, and great for entertaining.

Ingredients

Units Scale
  • 1 cup ricotta cheese
  • 1/2 cup mixed olives, pitted and finely chopped
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine ricotta, chopped olives, lemon zest, lemon juice, garlic, and olive oil.
  2. Stir until well mixed and creamy.
  3. Season with salt and pepper to taste.
  4. Transfer to a serving bowl and garnish with fresh parsley and a drizzle of olive oil.
  5. Serve with crackers, toasted bread, or fresh vegetables.

Notes

  • Use high-quality olives for the best flavor—Kalamata or green work well.
  • Can be made ahead and stored in the fridge for up to 2 days.
  • Blend the dip for a smoother texture or leave it chunky for more bite.
