- 2 cups almond flour or finely ground almonds
- 1 cup sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- 1/2 tsp almond extract
- 1/4 tsp salt
- Extra shredded coconut or finely chopped almonds for rolling (optional)
Instructions
- In a medium bowl, combine almond flour, shredded coconut, and salt.
- Add sweetened condensed milk and almond extract. Mix until fully combined and mixture holds together.
- Using a small cookie scoop or your hands, form mixture into 1-inch balls.
- Roll each ball in extra coconut or chopped almonds if desired.
- Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to 1 week.
