- 1 cup (200 g) long-grain rice (basmati or jasmine)
- 2 cups (500 ml) vegetable or chicken broth
- 2 tablespoons butter or olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups (150 g) mushrooms, sliced (white button, cremini, or shiitake)
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme (or 1 teaspoon fresh)
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1/4 cup (25 g) grated Parmesan (optional, for extra flavor)
Instructions
1️⃣ Sauté the Aromatics & Mushrooms:
- In a large skillet or pot, melt butter over medium heat.
- Add onions and sauté for 2-3 minutes until soft.
- Stir in garlic and mushrooms, cooking for 5 minutes until the mushrooms are browned and tender.
2️⃣ Toast the Rice:
- Add the rice to the skillet and stir for 1-2 minutes until lightly toasted.
3️⃣ Cook the Rice:
- Pour in broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is tender and liquid is absorbed.
4️⃣ Fluff & Serve:
- Remove from heat and let sit 5 minutes, then fluff with a fork.
- Stir in fresh parsley and Parmesan (if using).
- Serve hot as a side dish or enjoy on its own!
