Description

A super simple and fast version of enchiladas using frozen taquitos, enchilada sauce, and shredded cheese—baked to perfection for a satisfying weeknight dinner.

Ingredients

Units Scale
  • 1 box (20 count) frozen beef or chicken taquitos
  • 1 can (10 oz) red enchilada sauce
  • 1 1/2 to 2 cups shredded Mexican blend cheese
  • Optional toppings: sour cream, sliced green onions, chopped cilantro, jalapeños

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange frozen taquitos in a single layer in a 9×13-inch baking dish.
  3. Pour enchilada sauce evenly over the taquitos.
  4. Sprinkle shredded cheese generously over the top.
  5. Bake uncovered for 20–25 minutes or until taquitos are heated through and cheese is melted and bubbly.
  6. Let cool slightly, then add desired toppings before serving.

Notes

  • Customize with your favorite enchilada sauce or cheese blend.
  • Great for feeding a crowd with minimal prep.
