Lasagna Roll Ups are a fun twist on classic lasagna, with each noodle rolled around a cheesy ricotta filling, topped with marinara sauce and melted mozzarella—perfect for portion control and make-ahead meals.

- 10 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 tbsp chopped fresh parsley (or 1 tsp dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp Italian seasoning
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook lasagna noodles according to package instructions. Drain and lay flat on a parchment-lined surface.
- In a bowl, mix ricotta, egg, 1 cup mozzarella, Parmesan, parsley, salt, pepper, and Italian seasoning.
- Spread about 2 tablespoons of the ricotta mixture onto each noodle. Roll each noodle up gently and place seam-side down in the prepared dish.
- Pour marinara sauce over the roll ups and sprinkle with the remaining 1/2 cup mozzarella cheese.
- Cover with foil and bake for 25 minutes. Uncover and bake for another 5–10 minutes, until cheese is bubbly and lightly golden.
- Let cool for a few minutes before serving. Garnish with additional parsley if desired.
Notes
- Use spinach in the ricotta mixture for extra nutrition.
- Substitute cottage cheese for ricotta if preferred.
- Lasagna roll ups can be assembled ahead and baked later.
