Description

Lasagna Roll Ups are a fun twist on classic lasagna, with each noodle rolled around a cheesy ricotta filling, topped with marinara sauce and melted mozzarella—perfect for portion control and make-ahead meals.


Ingredients

  • 10 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 tbsp chopped fresh parsley (or 1 tsp dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook lasagna noodles according to package instructions. Drain and lay flat on a parchment-lined surface.
  3. In a bowl, mix ricotta, egg, 1 cup mozzarella, Parmesan, parsley, salt, pepper, and Italian seasoning.
  4. Spread about 2 tablespoons of the ricotta mixture onto each noodle. Roll each noodle up gently and place seam-side down in the prepared dish.
  5. Pour marinara sauce over the roll ups and sprinkle with the remaining 1/2 cup mozzarella cheese.
  6. Cover with foil and bake for 25 minutes. Uncover and bake for another 5–10 minutes, until cheese is bubbly and lightly golden.
  7. Let cool for a few minutes before serving. Garnish with additional parsley if desired.

Notes

  • Use spinach in the ricotta mixture for extra nutrition.
  • Substitute cottage cheese for ricotta if preferred.
  • Lasagna roll ups can be assembled ahead and baked later.
