Instructions

  • Prepare for baking:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
  • Mix the dry ingredients:

    • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • Prepare the wet ingredients:

    • In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Combine the batter:

    • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Gently fold in the grated carrots, grated apple, nuts, and raisins (if using).
