  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz / 400 g) diced tomatoes (with juice)
  • 6 cups (1.5 L) beef broth
  • 1 cup (250 ml) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 cup (85 g) elbow macaroni (or other small pasta)
  • 1 cup frozen or fresh green beans (optional)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

🍳 Brown the Ground Beef:

  1. Heat Oil:

    • In a large pot, heat olive oil over medium heat.
  2. Cook the Beef:

    • Add ground beef and cook until browned, breaking it into small pieces (5-7 minutes).
    • Drain excess fat if needed.
  3. Add Onion and Garlic:

    • Stir in chopped onion and garlic.
    • Cook until the onion is soft and fragrant (2-3 minutes).

🥕 Add Vegetables and Broth:

  1. Combine Ingredients:

    • Add carrots, celery, diced tomatoes (with juice), beef broth, and tomato sauce to the pot.
  2. Season the Soup:

    • Stir in Italian seasoning, smoked paprika, salt, and black pepper.
  3. Bring to a Simmer:

    • Bring to a boil, then reduce heat to low.
    • Simmer for 15 minutes, until vegetables are tender.

🍝 Add Pasta and Cook:

  1. Add Macaroni and Veggies:

    • Stir in macaroni, green beans (if using), and corn.
  2. Cook Until Tender:

    • Simmer for an additional 10 minutes, or until pasta is al dente.
  3. Adjust Seasoning:

    • Taste and add more salt and pepper if needed.

🍽️ Serve:

  1. Garnish:

    • Ladle the soup into bowls and sprinkle with fresh parsley.
  2. Serving Suggestions:

    • Serve with crusty bread, garlic toast, or a fresh green salad.

Notes

  • Make It Creamy: Add 1/2 cup heavy cream or a splash of milk for a creamy version.
  • Add More Veggies: Include peas, zucchini, or chopped spinach for extra nutrition.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. The pasta will absorb more broth, so add a splash of water or broth when reheating.
