- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/2 head green cabbage, chopped
- 1 carrot, shredded
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 1/4 cup chicken broth or water
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 3–4 minutes.
- Add garlic and cook for another 1 minute until fragrant.
- Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5–7 minutes.
- Stir in tomato paste, smoked paprika, oregano, salt, and pepper. Cook for 1–2 minutes to blend the flavors.
- Add chopped cabbage and shredded carrot. Pour in chicken broth or water and stir to combine.
- Cover and cook for 8–10 minutes, stirring occasionally, until the cabbage is tender.
- Uncover and cook for another 2–3 minutes if needed to reduce excess moisture.
- Garnish with chopped parsley and serve hot.
Notes
- Use purple cabbage for a colorful variation.
- Serve over rice or quinoa for a more filling meal.
- Add red pepper flakes for extra heat.
