These Grilled Brat Kabobs are a perfect summer dish, featuring juicy bratwurst and flavorful marinated vegetables. Easy to prepare and packed with smoky, savory goodness, they’re great for BBQs, tailgates, or weeknight grilling!

Ingredients

Units Scale

For the Kabobs:

  • 4 bratwurst sausages (pre-cooked or fresh)
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 6 skewers (metal or soaked wooden skewers)

For the Marinade:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar (or lemon juice)
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional, for sweetness)
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

1️⃣ Prepare the Marinade:

  • In a small bowl, whisk together olive oil, balsamic vinegar, garlic, mustard, honey, oregano, salt, and pepper.

2️⃣ Marinate the Vegetables:

  • In a large bowl, toss the peppers, zucchini, onion, and cherry tomatoes with the marinade.
  • Let them marinate for 30 minutes (or up to 2 hours for deeper flavor).

3️⃣ Prepare the Brats:

  • If using fresh bratwurst, grill or pan-cook them over medium heat for 10-12 minutes until cooked through.
  • Let them cool slightly, then cut into 1-inch pieces.

4️⃣ Assemble the Kabobs:

  • Thread the brat pieces and marinated vegetables onto skewers, alternating colors for a beautiful presentation.

5️⃣ Grill the Kabobs:

  • Preheat the grill to medium-high heat (375-400°F / 190-200°C).
  • Grill the kabobs for 10-12 minutes, turning occasionally, until vegetables are tender and slightly charred.

6️⃣ Serve & Enjoy:

  • Serve hot with mustard, BBQ sauce, or a side of grilled bread!

Notes

📌 Want more flavor? Add mushrooms, pineapple, or corn chunks to the skewers.
🌭 No grill? Bake in a 400°F (200°C) oven for 15-18 minutes, turning halfway.
🔥 Spicy twist? Use jalapeño bratwurst or add a pinch of chili flakes to the marinade.
🧄 Extra Garlic Kick? Toss in some whole garlic cloves on the skewers!
