Description

A healthy and flavorful Garlic Chicken Zucchini Noodles Stir Fry made with tender chicken, fresh zucchini noodles, and a savory garlic sauce for a low-carb, quick meal.


Ingredients

  • 3 medium zucchinis, spiralized into noodles
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce (low sodium)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add garlic and cook until fragrant, about 30 seconds.
  3. Add sliced chicken and stir-fry until fully cooked and golden brown, about 5-6 minutes. Season with salt and pepper.
  4. Add soy sauce, oyster sauce, sesame oil, and red pepper flakes (if using). Stir to coat the chicken.
  5. If a thicker sauce is desired, add the cornstarch slurry and stir until the sauce thickens slightly.
  6. Add the zucchini noodles and toss everything together. Cook for 2-3 minutes until the noodles are just tender but not mushy.
  7. Remove from heat, garnish with sliced green onions, and serve immediately.

Notes

  • Do not overcook the zucchini noodles to prevent them from becoming soggy.
  • Add bell peppers or carrots for extra color and nutrition.
  • Use pre-spiralized zucchini for a quicker prep.
