Scale
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 3 medium zucchinis, spiralized into noodles
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon soy sauce (low sodium)
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 2 green onions, sliced (for garnish)
- 1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add garlic and cook until fragrant, about 30 seconds.
- Add sliced chicken and stir-fry until fully cooked and golden brown, about 5-6 minutes. Season with salt and pepper.
- Add soy sauce, oyster sauce, sesame oil, and red pepper flakes (if using). Stir to coat the chicken.
- If a thicker sauce is desired, add the cornstarch slurry and stir until the sauce thickens slightly.
- Add the zucchini noodles and toss everything together. Cook for 2-3 minutes until the noodles are just tender but not mushy.
- Remove from heat, garnish with sliced green onions, and serve immediately.
Notes
- Do not overcook the zucchini noodles to prevent them from becoming soggy.
- Add bell peppers or carrots for extra color and nutrition.
- Use pre-spiralized zucchini for a quicker prep.
