Description

Galette des Rois, or King’s Cake, is a traditional French pastry made with buttery puff pastry and a rich almond frangipane filling. Often enjoyed during Epiphany, it’s a festive and delicious treat.


Ingredients

  • 2 sheets puff pastry, thawed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup almond flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 egg yolk + 1 tbsp milk (for egg wash)
  • 1 fève (small charm or dried bean, optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream butter and sugar together until light. Add eggs one at a time, mixing well, then stir in almond flour, vanilla, and almond extract to make frangipane filling.
  3. Roll out puff pastry sheets into equal-sized circles (about 9 inches). Place one circle on the baking sheet.
  4. Spread frangipane over the pastry, leaving a 1-inch border. Insert the fève into the filling if using.
  5. Top with the second pastry circle. Press edges to seal and crimp with a fork.
  6. Score a decorative pattern on top with a sharp knife, being careful not to cut through the pastry.
  7. Brush the top with egg yolk and milk mixture for a golden finish.
  8. Bake for 25–30 minutes or until puffed and deeply golden. Cool slightly before serving.

Notes

  • The person who finds the fève in their slice is crowned king or queen for the day.
  • Let the galette cool slightly before slicing for the filling to set.
  • Can be made ahead and gently reheated before serving.
