Description

For the Mint Patties:

  • 2 1/2 cups powdered sugar, sifted
  • 3 tablespoons unsalted butter, softened
  • 23 tablespoons heavy cream (as needed)
  • 1 teaspoon peppermint extract
  • 12 drops red or pink food coloring

For the Coating:

  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil or vegetable oil
  • Valentine sprinkles or crushed candy canes (optional, for decoration)

Instructions

  1. Make the Mint Dough:
    • In a large bowl, mix together the powdered sugar, softened butter, heavy cream (start with 2 tablespoons), peppermint extract, and food coloring.
    • Knead the mixture until a smooth, pliable dough forms. If the dough is too dry, add a little more heavy cream, 1 teaspoon at a time.
  2. Shape the Patties:
    • Roll the dough into small balls (about 1 inch in diameter), then gently flatten them into discs.
    • Place the patties on a baking sheet lined with parchment paper. Chill in the refrigerator for 30 minutes to firm up.
  3. Melt the Chocolate:
    • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals, stirring in between until smooth.
  4. Coat the Patties:
    • Dip each chilled patty into the melted chocolate, ensuring it’s fully coated. Use a fork to lift the patty and tap off any excess chocolate.
    • Place the coated patties back onto the parchment paper and sprinkle with Valentine sprinkles or crushed candy, if desired.
  5. Set the Coating:
    • Let the patties sit at room temperature or refrigerate them for 15–20 minutes until the chocolate is firm.

Notes

  • Store patties in an airtight container in the refrigerator for up to 2 weeks.
  • For a fun twist, use almond or vanilla extract instead of peppermint.
  • White chocolate can also be used for the coating if preferred.
