Description

Easter Bunny Coconut Tails are adorable no-bake coconut treats shaped like fluffy bunny tails. These sweet and chewy balls are perfect for springtime celebrations, Easter baskets, or festive party trays.

Ingredients

Units Scale
  • 2 1/2 cups sweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1/4 cup powdered sugar
  • 1/2 cup finely shredded coconut (for rolling)

Instructions

  1. In a large bowl, mix together shredded coconut, sweetened condensed milk, vanilla extract, almond extract (if using), and powdered sugar until a thick, sticky dough forms.
  2. Using your hands or a small cookie scoop, form the mixture into 1-inch balls.
  3. Roll each ball in the finely shredded coconut to coat completely.
  4. Place the coconut tails on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to firm up.
  5. Serve chilled or at room temperature.

Notes

  • Store in an airtight container in the fridge for up to 1 week.
  • Great for Easter-themed dessert tables or gifting.
  • For a fun twist, add a drop of food coloring to the mixture or rolling coconut.
  • Use unsweetened shredded coconut for a less sweet version.
