- 1 cup sliced mushrooms

Instructions
- In a large pot, heat oil over medium heat. Add garlic, ginger, and onion. Sauté for 2–3 minutes until fragrant and softened.
- Pour in the broth and soy sauce. Bring to a gentle boil.
- Add mushrooms and simmer for 5 minutes.
- Carefully add dumplings and simmer according to package directions, typically 6–8 minutes or until cooked through and floating.
- Add bok choy or spinach and cook for another 1–2 minutes until wilted.
- Season with salt and pepper to taste.
- Ladle soup into bowls and garnish with green onions. Add chili oil or sesame seeds if desired.

- Use homemade dumplings if preferred—just ensure they’re sealed well to avoid breaking apart.
- For extra flavor, add a splash of rice vinegar or a drizzle of hoisin sauce.
