- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups diced potatoes (Yukon Gold or Russet)
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon. Remove and set aside.
- In the same pot, sauté onion until translucent, about 5 minutes. Add garlic and cook for 1 minute more.
- Add potatoes, broth, thyme, and oregano. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Stir in the cooked sausage and heavy cream. Simmer for another 5 minutes.
- Add chopped kale or spinach and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste. Stir in Parmesan cheese if using and serve hot.
Notes
- For a lighter version, use half-and-half or milk instead of heavy cream.
- Can be made ahead and stored in the fridge for up to 3 days.
- Top with crispy bacon bits for added flavor and texture.
