Instructions
- If using fresh corn, boil or grill it and cut the kernels off the cob. If using frozen, thaw and drain; if canned, drain well.
- In a large bowl, combine corn, feta, red onion, and herbs.
- Drizzle with olive oil and lime juice. Toss gently to mix.
- Season with salt, pepper, and optional chili flakes or jalapeño.
- Serve immediately or refrigerate for 30 minutes to chill and enhance flavor.
