A creamy, cheesy, and flavorful corn dip perfect for parties and gatherings. This dip is easy to make and served hot or cold with chips or veggies.

- 2 cups corn kernels (fresh, canned, or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup chopped green onions
- 1/4 cup diced red bell pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat oven to 350°F (175°C) if serving warm.
- In a large bowl, mix together the corn, cheddar cheese, sour cream, mayonnaise, green onions, red bell pepper, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Transfer the mixture to a baking dish if baking, or to a serving bowl if serving cold.
- If baking, cook for 20–25 minutes until the dip is hot and bubbly.
- Remove from oven and sprinkle with chopped cilantro if using.
- Serve warm or chilled with tortilla chips, crackers, or fresh vegetables.
Notes
- You can add cooked and crumbled bacon for extra flavor.
- Use pepper jack cheese for a spicier version.
- Can be made a day in advance and stored in the fridge.
