Description

A creamy, cheesy, and flavorful corn dip perfect for parties and gatherings. This dip is easy to make and served hot or cold with chips or veggies.


Ingredients

  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chopped green onions
  • 1/4 cup diced red bell pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 350°F (175°C) if serving warm.
  2. In a large bowl, mix together the corn, cheddar cheese, sour cream, mayonnaise, green onions, red bell pepper, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  3. Transfer the mixture to a baking dish if baking, or to a serving bowl if serving cold.
  4. If baking, cook for 20–25 minutes until the dip is hot and bubbly.
  5. Remove from oven and sprinkle with chopped cilantro if using.
  6. Serve warm or chilled with tortilla chips, crackers, or fresh vegetables.

Notes

  • You can add cooked and crumbled bacon for extra flavor.
  • Use pepper jack cheese for a spicier version.
  • Can be made a day in advance and stored in the fridge.
