This Simple Garden Salad is crisp, fresh, and loaded with colorful veggies. Tossed in a homemade lemon vinaigrette, it’s the perfect everyday salad to serve as a side or enjoy as a light meal. Add your favorite proteins to make it your own!
Ingredients
For the Salad:

4 cups mixed greens (romaine, spinach, arugula, etc.)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup shredded carrots
-
1/4 cup croutons (optional)

1/4 cup shredded cheese (cheddar, mozzarella, or Parmesan – optional)
For the Lemon Vinaigrette:

3 tablespoons olive oil
-
1 tablespoon fresh lemon juice
-
1 teaspoon Dijon mustard
-
1/2 teaspoon honey or maple syrup

Salt and black pepper to taste
Instructions

In a small bowl or jar, whisk or shake together all the vinaigrette ingredients until well combined.

In a large bowl, toss together all salad ingredients.

Drizzle with dressing just before serving and toss to coat evenly.

Top with extra cheese or croutons if desired.
Notes

Add grilled chicken, tuna, chickpeas, or a boiled egg to make it a full meal.

Swap in your favorite dressing if lemon isn’t your thing.
