Christmas Peanut Butter Balls

Ingredients:
1 1/2 cups creamy peanut butter
1/2 cup unsalted butter, softened
3 1/2 cups powdered sugar
1 teaspoon vanilla extract
2 cups semi-sweet or milk chocolate chips
1 tablespoon shortening
Optional: Sprinkles or crushed candy canes for decoration


Directions:
Mix Peanut Butter Mixture: In a large bowl, combine the peanut butter, butter, powdered sugar, and vanilla extract. Mix until well blended.

Form Balls: Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Chill: Chill the peanut butter balls in the refrigerator for at least 30 minutes to firm up.

Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the chocolate chips with the shortening, stirring until smooth.

Dip Peanut Butter Balls: Dip each chilled peanut butter ball into the melted chocolate, ensuring it’s completely coated. Use a fork to remove and tap off excess chocolate.

Decorate: Place the dipped balls back on the parchment paper. If using, immediately sprinkle with festive sprinkles or crushed candy canes.

Chill Again: Refrigerate the peanut butter balls until the chocolate sets.
