Christmas Bar Cookies

Ingredients

½ cup unsalted butter, melted

½ cup packed light brown sugar

⅓ cup granulated sugar

1 large egg, room temperature

1 teaspoon vanilla extract

1 cup all-purpose flour

¼ teaspoon salt

½ cup semi-sweet chocolate chips

½ cup red and green M&M’s candy

¼ cup Christmas jimmies (sprinkles)

Instructions

Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy removal.

Mix Butter and Sugars: In a large bowl, combine the melted butter, light brown sugar, and granulated sugar until well blended.

Add Egg and Vanilla: Mix in the room temperature egg and vanilla extract until smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt.

Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.

Add Chocolate Chips and M&M’s: Fold in the semi-sweet chocolate chips and most of the red and green M&M’s, reserving some for the top.

Spread the Dough: Transfer the cookie dough to the prepared baking pan. Spread it out evenly with a spatula.

Add Final Touches: Sprinkle the remaining M&M’s and Christmas jimmies over the top of the dough.

Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and the center is set.

Cool and Cut: Allow the cookies to cool completely in the pan. Use the parchment paper to lift out the giant cookie, then cut it into bars or squares.
