Description

These Chocolate Brownie Cookies are soft, fudgy, and packed with deep chocolate flavor, combining the best of both worlds—crackly brownie tops with a chewy, gooey center! Perfect for chocolate lovers, these cookies are easy to make and totally irresistible.

  • 200g (7 oz) dark chocolate (60-70% cocoa, chopped)
  • 50g (1/4 cup) unsalted butter
  • 2 large eggs
  • 150g (3/4 cup) granulated sugar
  • 50g (1/4 cup) brown sugar
  • 1 tsp vanilla extract
  • 65g (1/2 cup) all-purpose flour
  • 20g (1/4 cup) unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 100g (1/2 cup) chocolate chips or chunks (for extra gooeyness, optional)

Instructions

Step 1: Melt the Chocolate & Butter

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a heatproof bowl, melt chopped chocolate and butter together using a double boiler (or microwave in 30-second intervals, stirring in between). Set aside to cool slightly.

Step 2: Whip the Eggs & Sugars

  1. In a large bowl, whisk together eggs, granulated sugar, and brown sugar for 2-3 minutes, until light and fluffy.
  2. Stir in the vanilla extract.

Step 3: Combine Dry & Wet Ingredients

  1. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  2. Gently fold the melted chocolate mixture into the whipped eggs.
  3. Gradually add the dry ingredients, mixing until just combined.
  4. Fold in chocolate chips or chunks, if using.

Step 4: Scoop & Bake

  1. Scoop tablespoon-sized portions of dough onto the lined baking sheet, spacing them 2 inches apart.
  2. Bake for 8-10 minutes, until the tops are crackly and shiny, but the centers are still soft.
  3. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
