- 200g (7 oz) dark chocolate (60-70% cocoa, chopped)
- 50g (1/4 cup) unsalted butter
- 2 large eggs
- 150g (3/4 cup) granulated sugar
- 50g (1/4 cup) brown sugar
- 1 tsp vanilla extract
- 65g (1/2 cup) all-purpose flour
- 20g (1/4 cup) unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 100g (1/2 cup) chocolate chips or chunks (for extra gooeyness, optional)
Instructions
Step 1: Melt the Chocolate & Butter
- Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a heatproof bowl, melt chopped chocolate and butter together using a double boiler (or microwave in 30-second intervals, stirring in between). Set aside to cool slightly.
Step 2: Whip the Eggs & Sugars
- In a large bowl, whisk together eggs, granulated sugar, and brown sugar for 2-3 minutes, until light and fluffy.
- Stir in the vanilla extract.
Step 3: Combine Dry & Wet Ingredients
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gently fold the melted chocolate mixture into the whipped eggs.
- Gradually add the dry ingredients, mixing until just combined.
- Fold in chocolate chips or chunks, if using.
Step 4: Scoop & Bake
- Scoop tablespoon-sized portions of dough onto the lined baking sheet, spacing them 2 inches apart.
- Bake for 8-10 minutes, until the tops are crackly and shiny, but the centers are still soft.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
