- 2 celery stalks, diced
- 6 cups chicken broth
- 1 cup cooked shredded chicken
- 3/4 cup star-shaped pasta (stelline)
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5-7 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken, pasta, and thyme. Reduce heat to a simmer.
- Cook until pasta is tender, about 8-10 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh parsley if desired and serve warm.
Notes
- You can use leftover or rotisserie chicken for convenience.
- Feel free to add peas or corn for extra veggies.
- For a thicker soup, reduce broth by 1 cup.
