Cherry Garcia Fudge is a delightful confection that combines the rich flavors of white chocolate, sweet maraschino cherries, and semi-sweet chocolate chips, inspired by the beloved ice cream flavor. This easy-to-make treat is perfect for holidays, parties, or simply satisfying your sweet tooth.

  • 1 can (14 oz/397g) sweetened condensed milk
  • 4 tablespoons (58g) unsalted butter
  • 2½ cups (485g) maraschino cherries, drained and chopped
  • 2½ cups (457g) mini semi-sweet chocolate chips
  • 2 tablespoons cherry-flavored gelatin powder (optional, for enhanced cherry flavor)

Instructions

  • Prepare the Cherries:
    • Drain the maraschino cherries thoroughly and chop them into small pieces.
    • Place the chopped cherries between layers of paper towels and press gently to remove excess moisture. This step is crucial to prevent the fudge from becoming too soft.
  • Melt the Base Ingredients:
    • In a medium saucepan over medium-low heat, combine the white chocolate chips, sweetened condensed milk, butter, and cherry-flavored gelatin powder (if using).
    • Stir continuously until the mixture is completely melted and smooth.
  • Incorporate Cherries and Chocolate Chips:
    • Remove the saucepan from heat.
    • Gently fold in 2 cups of the chopped cherries and 2 cups of the mini chocolate chips until evenly distributed. Be careful not to overmix, as the chocolate chips may begin to melt, creating a marbled effect.
  • Transfer to Pan:
    • Line a 9×13-inch (23×33 cm) baking pan with parchment paper, leaving some overhang for easy removal.
    • Pour the fudge mixture into the prepared pan, spreading it evenly with a spatula.
  • Add Toppings:
    • Sprinkle the remaining ½ cup of chopped cherries and ½ cup of mini chocolate chips over the top of the fudge.
