- 1 medium head cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 cup shredded red cabbage
- 1/4 cup chopped red onion
- 1 avocado, sliced
- Fresh cilantro, for garnish
Cilantro Lime Crema:
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 clove garlic, minced
- Salt, to taste
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, toss cauliflower florets with olive oil, chili powder, smoked paprika, cumin, salt, and pepper.
- Spread cauliflower evenly on the baking sheet and roast for 25–30 minutes, flipping halfway through, until tender and browned.
- Meanwhile, blend or whisk together all crema ingredients until smooth. Adjust seasoning to taste.
- Warm tortillas in a skillet or microwave.
- Assemble tacos by adding roasted cauliflower to each tortilla. Top with cabbage, red onion, avocado slices, and a drizzle of cilantro lime crema.
- Garnish with fresh cilantro and serve immediately.
Notes
- Make it vegan by using plant-based yogurt or sour cream for the crema.
- Add a squeeze of lime or a dash of hot sauce for extra brightness and heat.
- Cauliflower can be roasted ahead and reheated before assembling tacos.
