Description

Flavor-packed cauliflower tacos roasted to perfection and topped with a zesty cilantro lime crema, perfect for a healthy and satisfying vegetarian meal.


Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1/4 cup chopped red onion
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Cilantro Lime Crema:

  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 clove garlic, minced
  • Salt, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss cauliflower florets with olive oil, chili powder, smoked paprika, cumin, salt, and pepper.
  3. Spread cauliflower evenly on the baking sheet and roast for 25–30 minutes, flipping halfway through, until tender and browned.
  4. Meanwhile, blend or whisk together all crema ingredients until smooth. Adjust seasoning to taste.
  5. Warm tortillas in a skillet or microwave.
  6. Assemble tacos by adding roasted cauliflower to each tortilla. Top with cabbage, red onion, avocado slices, and a drizzle of cilantro lime crema.
  7. Garnish with fresh cilantro and serve immediately.

Notes

  • Make it vegan by using plant-based yogurt or sour cream for the crema.
  • Add a squeeze of lime or a dash of hot sauce for extra brightness and heat.
  • Cauliflower can be roasted ahead and reheated before assembling tacos.
