Description

Blondie Cookies are rich, chewy cookie bars with a buttery brown sugar base, similar to a brownie but without cocoa. They’re easy to make and perfect for satisfying a sweet tooth.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, stir together melted butter and brown sugar until well combined.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. Stir in flour, baking powder, and salt until just combined. Do not overmix.
  5. Fold in white chocolate chips and/or chopped nuts if using.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 20–25 minutes or until the top is golden and a toothpick inserted in the center comes out with moist crumbs.
  8. Cool in pan before cutting into squares and serving.

Notes

  • For extra gooey blondies, slightly underbake them.
  • Customize with butterscotch chips, dried fruit, or sprinkles.
  • Store in an airtight container for up to 5 days at room temperature.
