Blondie Cookies are rich, chewy cookie bars with a buttery brown sugar base, similar to a brownie but without cocoa. They’re easy to make and perfect for satisfying a sweet tooth.

- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips (optional)
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, stir together melted butter and brown sugar until well combined.
- Add the egg and vanilla extract, mixing until smooth.
- Stir in flour, baking powder, and salt until just combined. Do not overmix.
- Fold in white chocolate chips and/or chopped nuts if using.
- Spread the batter evenly into the prepared pan.
- Bake for 20–25 minutes or until the top is golden and a toothpick inserted in the center comes out with moist crumbs.
- Cool in pan before cutting into squares and serving.
Notes
- For extra gooey blondies, slightly underbake them.
- Customize with butterscotch chips, dried fruit, or sprinkles.
- Store in an airtight container for up to 5 days at room temperature.
