Description
Flaky puff pastry twists filled with tangy goat cheese and sweet blackberry jam, topped with lemon-thyme sugar for a delightful sweet-savory treat.

- 2 sheets frozen puff pastry, thawed
- 2 cups fresh blackberries
- 1/2 cup water
- 1 tbsp lemon juice
- 3/4 cup sugar
- 8 oz goat cheese
- Zest of 2 lemons
- 4 tsp raw sugar
- 2 tsp fresh thyme, minced
- 1 egg
- 1 tbsp water (for egg wash)
Instructions
- In a saucepan, combine blackberries, 1/2 cup water, lemon juice, and 3/4 cup sugar. Bring to a boil, reduce heat, and simmer for 20–30 minutes, mashing berries and reducing liquid to a jam-like consistency. Let cool.
- Preheat oven to 400°F (200°C) and line baking sheets with parchment paper.
- Roll out each puff pastry sheet to about 12 inches. Spread half of the goat cheese and half of the blackberry jam on each sheet.
- Cut each sheet into 12 strips, fold each strip in half lengthwise, press gently, and twist.
- Place the twists on baking sheets. Mix lemon zest, raw sugar, and thyme in a bowl.
- Beat egg with 1 tbsp water to make an egg wash. Brush twists with egg wash and sprinkle with lemon-thyme sugar.
- Bake for 16–18 minutes until golden and puffed. Let cool slightly before serving.
Notes
- Substitute goat cheese with cream cheese or brie for different flavors.
- Use store-bought blackberry jam to save time.
- Twists can be assembled in advance and baked before serving.
