- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 lbs ground beef
- 2 tablespoons tomato paste
- 1 (28 oz) can crushed tomatoes
- 2 (15 oz) cans kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup beef broth
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional toppings: shredded cheese, sour cream, green onions, cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 more minute.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Stir in tomato paste and cook for 2 minutes. Add crushed tomatoes, beans, beef broth, and all spices. Stir well to combine.
- Bring chili to a simmer. Reduce heat to low, cover, and cook for 30–45 minutes, stirring occasionally.
- Adjust seasoning to taste. Serve hot with desired toppings.
Notes
- Chili tastes even better the next day after the flavors meld.
- Freeze leftovers in airtight containers for up to 3 months.
