Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 lbs ground beef
  • 2 tablespoons tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, green onions, cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 more minute.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in tomato paste and cook for 2 minutes. Add crushed tomatoes, beans, beef broth, and all spices. Stir well to combine.
  4. Bring chili to a simmer. Reduce heat to low, cover, and cook for 30–45 minutes, stirring occasionally.
  5. Adjust seasoning to taste. Serve hot with desired toppings.
