Scale
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp Sriracha (adjust to taste)
- 1 tbsp honey
- 1 tbsp lime juice
- 2 tbsp olive oil
- Salt and black pepper, to taste
- Chopped green onions and sesame seeds, for garnish
- Skewers (wooden or metal)
Instructions
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice to make the bang bang sauce. Reserve half for serving.
- In a separate bowl, toss chicken pieces with olive oil, salt, pepper, and half of the bang bang sauce.
- Thread the chicken pieces onto skewers.
- Preheat grill or grill pan over medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Remove from grill and brush with reserved bang bang sauce.
- Garnish with green onions and sesame seeds. Serve hot.
Notes
- Can be cooked under the broiler if a grill is not available.
- Bang bang sauce also works great as a dip or sandwich spread.
- Serve with rice or a fresh salad to make it a full meal.
