Description

Huli Huli Chicken is a Hawaiian favorite featuring juicy grilled chicken marinated in a sweet and tangy sauce made with pineapple juice, soy sauce, and ginger. Perfect for cookouts and summer meals.


Ingredients

  • 45 boneless, skinless chicken thighs or breasts
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, and sesame oil.
  2. Reserve 1/4 cup of the marinade for basting later. Pour the remaining marinade over the chicken in a resealable bag or dish. Marinate in the fridge for at least 2 hours, preferably overnight.
  3. Preheat grill to medium heat. Remove chicken from the marinade and discard the used marinade.
  4. Grill chicken for 6–8 minutes per side or until internal temperature reaches 165°F (74°C), basting occasionally with the reserved marinade.
  5. Optional: To thicken the basting sauce, simmer the reserved marinade with cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water) over medium heat until slightly thickened.
  6. Let chicken rest for a few minutes before serving. Garnish with green onions or sesame seeds if desired.

Notes

  • Chicken thighs are preferred for juicier results, but breasts work well too.
  • Pairs perfectly with steamed rice or grilled pineapple.
  • Can be cooked on a grill pan or in the oven if grilling isn’t an option.
