Description
Huli Huli Chicken is a Hawaiian favorite featuring juicy grilled chicken marinated in a sweet and tangy sauce made with pineapple juice, soy sauce, and ginger. Perfect for cookouts and summer meals.

- 4–5 boneless, skinless chicken thighs or breasts
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 1 tablespoon rice vinegar
- 1 tablespoon fresh ginger, grated
- 2 garlic cloves, minced
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch (optional, for thickening)
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, and sesame oil.
- Reserve 1/4 cup of the marinade for basting later. Pour the remaining marinade over the chicken in a resealable bag or dish. Marinate in the fridge for at least 2 hours, preferably overnight.
- Preheat grill to medium heat. Remove chicken from the marinade and discard the used marinade.
- Grill chicken for 6–8 minutes per side or until internal temperature reaches 165°F (74°C), basting occasionally with the reserved marinade.
- Optional: To thicken the basting sauce, simmer the reserved marinade with cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water) over medium heat until slightly thickened.
- Let chicken rest for a few minutes before serving. Garnish with green onions or sesame seeds if desired.
Notes
- Chicken thighs are preferred for juicier results, but breasts work well too.
- Pairs perfectly with steamed rice or grilled pineapple.
- Can be cooked on a grill pan or in the oven if grilling isn’t an option.
