Description

This Autumn Apple Salad is a fresh, crisp, and colorful dish packed with seasonal ingredients like apples, nuts, and greens, tossed in a tangy vinaigrette. Perfect as a light lunch or a festive side.

Ingredients

Units Scale
  • 2 apples (Honeycrisp or Fuji), thinly sliced
  • 5 oz mixed greens or arugula
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup chopped pecans or walnuts
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  2. In a large salad bowl, combine mixed greens, apple slices, cranberries, cheese, nuts, and red onion.
  3. Drizzle the vinaigrette over the salad just before serving and toss gently to combine.

Notes

  • Use a mix of red and green apples for color and flavor contrast.
  • Toast the nuts for extra crunch and aroma.
  • Can be made ahead—just add the dressing and apples right before serving.
