Description

These Amaretto Chocolate Truffles are rich, velvety, and infused with the warm almond flavor of Amaretto liqueur. Perfect for gifting, special occasions, or an indulgent treat, these bite-sized delights melt in your mouth with every bite!

For the Truffles:

  • 8 oz (225g) high-quality dark chocolate (at least 60% cocoa, finely chopped)
  • 1/2 cup (120ml) heavy cream
  • 2 tablespoons unsalted butter (softened)
  • 2 tablespoons Amaretto liqueur (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt (enhances flavor)

For Coating (Choose One or Mix & Match):

  • 1/2 cup cocoa powder (for a classic finish)
  • 1/2 cup finely chopped toasted almonds (for extra crunch)
  • 1/2 cup melted dark chocolate (for a glossy chocolate shell)
  • 1/2 cup powdered sugar (for a delicate sweetness)



Instructions

1. Make the Chocolate Ganache

  1. Place chopped chocolate in a heatproof bowl.
  2. In a saucepan, heat heavy cream over medium heat until it just begins to simmer (do not boil).
  3. Pour the hot cream over the chocolate and let sit for 2 minutes.
  4. Gently whisk until smooth, then stir in butter, Amaretto, vanilla, and salt.

2. Chill the Ganache

  1. Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until firm enough to scoop.

3. Shape the Truffles

  1. Using a small spoon or melon baller, scoop 1-inch portions of the ganache and roll into smooth balls. (Tip: Lightly dust your hands with cocoa powder to prevent sticking!)
  2. Place the truffles on a parchment-lined tray and chill for 15-20 minutes before coating.

4. Coat & Decorate

  1. Roll the truffles in cocoa powder, chopped almonds, or powdered sugar, OR dip in melted chocolate for a glossy finish.
  2. Chill for another 10-15 minutes to set.

Notes

  • Want a stronger Amaretto flavor? Add an extra tablespoon, but balance with more chocolate for firmness.
