For the Truffles:
- 8 oz (225g) high-quality dark chocolate (at least 60% cocoa, finely chopped)
- 1/2 cup (120ml) heavy cream
- 2 tablespoons unsalted butter (softened)
- 2 tablespoons Amaretto liqueur (adjust to taste)
- 1/2 teaspoon vanilla extract
- 1 pinch salt (enhances flavor)
For Coating (Choose One or Mix & Match):
- 1/2 cup cocoa powder (for a classic finish)
- 1/2 cup finely chopped toasted almonds (for extra crunch)
- 1/2 cup melted dark chocolate (for a glossy chocolate shell)
- 1/2 cup powdered sugar (for a delicate sweetness)
Instructions
1. Make the Chocolate Ganache
- Place chopped chocolate in a heatproof bowl.
- In a saucepan, heat heavy cream over medium heat until it just begins to simmer (do not boil).
- Pour the hot cream over the chocolate and let sit for 2 minutes.
- Gently whisk until smooth, then stir in butter, Amaretto, vanilla, and salt.
2. Chill the Ganache
- Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until firm enough to scoop.
3. Shape the Truffles
- Using a small spoon or melon baller, scoop 1-inch portions of the ganache and roll into smooth balls. (Tip: Lightly dust your hands with cocoa powder to prevent sticking!)
- Place the truffles on a parchment-lined tray and chill for 15-20 minutes before coating.
4. Coat & Decorate
- Roll the truffles in cocoa powder, chopped almonds, or powdered sugar, OR dip in melted chocolate for a glossy finish.
- Chill for another 10-15 minutes to set.

Notes
- Want a stronger Amaretto flavor? Add an extra tablespoon, but balance with more chocolate for firmness.
