A Strawberries & Cream Cake Roll

Ingredients:

For the Cake:

  • 4 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar (for rolling)

For the Filling:

  • 1 cup heavy whipping cream

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (180°C). Grease and line a 15×10-inch jellyroll pan with parchment paper, leaving an overhang on the long sides for easy removal.

2. Prepare the Cake Batter:

  • In a mixing bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
  • In a separate mixing bowl, beat the room temperature eggs, granulated sugar, and vanilla extract together using an electric mixer. Beat until the mixture is pale and fluffy, which may take about 5 minutes.

3. Combine Dry and Wet Ingredients:

  • Gently fold the sifted dry ingredients into the egg-sugar mixture in two or three additions. Fold just until the dry ingredients are fully incorporated, being careful not to overmix.

4. Bake the Cake:

  • Pour the cake batter into the prepared jellyroll pan and spread it evenly.
  • Bake in the preheated oven for approximately 12-15 minutes or until the cake is lightly golden and springs back when touched.

5. Prepare for Rolling:

  • While the cake is baking, lay a clean kitchen towel flat on the countertop and generously dust it with powdered sugar. This will prevent the cake from sticking to the towel.

6. Roll the Cake:

  • As soon as the cake comes out of the oven, carefully invert it onto the prepared kitchen towel.
  • Peel off the parchment paper from the bottom of the cake.
  • Starting from one of the shorter ends, roll the warm cake and towel together into a tight roll. Allow it to cool completely while rolled up.

7. Prepare the Filling:

  • In a mixing bowl, whip the heavy whipping cream until stiff peaks form. You can add a touch of sugar if desired, but it’s optional.

8. Unroll and Fill the Cake:

  • Once the cake has cooled completely, carefully unroll it from the towel.
  • Spread the whipped cream evenly over the entire surface of the cake.

9. Roll the Cake Again:

  • Gently re-roll the cake, this time without the towel. Roll it tightly and place it seam-side down on a serving platter.

10. Chill and Serve: – Refrigerate the cake roll for at least an hour before serving. This helps it set and makes it easier to slice. – You can garnish the cake roll with fresh strawberries or powdered sugar for an extra touch of flavor and decoration.

11. Slice and Enjoy: – Slice the Strawberries & Cream Cake Roll into pieces and serve. It’s a delightful dessert that combines the sweetness of cake with the freshness of strawberries and cream.
