Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Red and green food coloring
Instructions:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Divide the dough into two equal portions.
Leave one portion of the dough as is. In the other portion, add red food coloring and mix until the color is evenly distributed. In the remaining portion, add green food coloring and mix well.
On a lightly floured surface, roll out the plain dough into a rectangle.
Roll out the red dough into a similar-sized rectangle and place it on top of the plain dough.
Roll out the green dough into a rectangle and place it on top of the red dough.
Starting from one edge, carefully roll the layered dough into a log shape.
Wrap the log in plastic wrap and refrigerate for at least 1-2 hours, or until firm.
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Slice the chilled log into 1/4-inch thick rounds and place them on the prepared baking sheets.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
