- 1 zucchini, sliced into rounds or half-moons
- 1 yellow squash, sliced
- 1 red bell pepper, cut into strips
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
Instructions
- In a large bowl or zip-top bag, combine balsamic vinegar, olive oil, garlic, Italian seasoning, salt, and pepper. Add all vegetables and toss to coat.
- Marinate in the refrigerator for at least 30 minutes, up to 2 hours.
- Preheat grill to medium-high heat. Thread vegetables onto skewers or place in a grill basket.
- Grill vegetables for 8–10 minutes, turning occasionally, until tender and lightly charred.
- Remove from grill and serve warm or at room temperature.
Notes
- Use a variety of seasonal vegetables like mushrooms, asparagus, or eggplant.
- For oven-roasting, bake at 425°F (220°C) for 20–25 minutes on a sheet pan.
- Leftovers are great in wraps, grain bowls, or pasta dishes.
