Description

Zesty Balsamic Marinated Grilled Vegetables are a colorful, flavorful medley of veggies soaked in a tangy balsamic herb marinade and grilled to perfection. A vibrant side dish for summer cookouts or healthy meals.


Ingredients

  • 1 zucchini, sliced into rounds or half-moons
  • 1 yellow squash, sliced
  • 1 red bell pepper, cut into strips
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large bowl or zip-top bag, combine balsamic vinegar, olive oil, garlic, Italian seasoning, salt, and pepper. Add all vegetables and toss to coat.
  2. Marinate in the refrigerator for at least 30 minutes, up to 2 hours.
  3. Preheat grill to medium-high heat. Thread vegetables onto skewers or place in a grill basket.
  4. Grill vegetables for 8–10 minutes, turning occasionally, until tender and lightly charred.
  5. Remove from grill and serve warm or at room temperature.

Notes

  • Use a variety of seasonal vegetables like mushrooms, asparagus, or eggplant.
  • For oven-roasting, bake at 425°F (220°C) for 20–25 minutes on a sheet pan.
